Crunchy and delicious lechon

LOS BAÑOS, Philippines (The Adobo Chronicles) – The U.S. Food and Drug Administration announced Thursday that the AquAdvantage salmon — developed using growth hormone from Chinook salmon and a gene from an eel-like ocean fish that makes it reach market size twice as quickly as other salmon — has become the first genetically engineered animal approved for American consumption.

AquaBounty Technologies Inc., the Massachusetts company that created the fish, calls it “the world’s most sustainable salmon.” Opponents call it “Frankenfish.”

Almost simultaneously, scientists at the University of the Philippines at Los Baños, Laguna, announced that they have engineered a fast-reproducing, fast-growing pig that is both safe for human consumption and a big boost to lechon production.

Lechon is a popular way of cooking a whole pig by roasting it for hours over a pit of charcoal fire. No Filipino fiesta or family gathering is complete without this traditional delicacy.

The scientists said they have been successful in injecting testosterone from dogs into pigs to make them reproduce faster and become more prolific. A domestic farm pig averages 10 piglets per litter and can have two to three litters per year.

The genetically modified pigs will mature faster. At the same time, lechon roasting time will be cut by almost 50 percent.

Lechon pa more (more lechon), as Filipinos would say!

ANOTHER GUINNESS WORLD RECORD FOR THE PHILIPPINES

imageMANILA, Philippines (The Adobo Chronicles) – The Philippines has just earned another Guinness World Record for the largest serving of roast pork (lechon). The previous record was held by Mexico.

Some 4,045 kilos of roast pork was unloaded on Sunday at the Quezon City Memorial Circle, breaking the previous record set by Mexico in 2010 (3,094.2 kilos).

The event was sponsored by Calata Corporation, the country’s largest retailer and distributor of top agrochemical brands, feeds and fertilizers, which slaughtered 330 pigs.

The lechon was served to the public free of charge.

Guinness officials are still verifying if this Philippine record also qualifies as the largest serving of cholesterol.

This is the second pork-related Guinness World Record achieved by the Philippines.

The first was the distinction of having the largest pork barrel scam in the world. The scam, which involved elected and appointed government officials as well as private business persons, cost taxpayers a whopping Ten Billion pesos.

CALIFORNIA RANCHERS DISCOVER PIG WITH FLUORESCENT BLUE FAT, FILAMS SHOWCASE FIRST BLUE LECHON

imageMORGAN HILL, California (The Adobo Chronicles®) – When ranchers in Morgan Hill, California shot and cut open a wild hog, they realized what they had in front of them was much more than your average swine. The pig’s insides were cotton-candy blue color.

The ranchers said  that the animal is healthy and normal in every way—except for its blue-colored fat, which runs throughout its entire body.

Scientists at Stanford University who examined the pig weren’t sure whether the blue color was a result of some bacterial or environmental contamination, or the result of a genetic defect. So they asked a Filipino American family in Palo Alto to cook the pig the Filipino way — lechon (roasted pig).

Lo and behold, while the lechon looked as normal as a pig roasted in an open-fire pit, blue hues seemed to permeate through the pig’s skin, making for a first in the history of lechon-making: a blue lechon!image

Other than the patches of blue, those who did partake of the lechon dinner attest to the fact that it tasted much like the regular Pinoy delicacy: crispy on the outside and succulent on the inside.

The scientists then determined that the pig’s blue fat was genetic and the pig was fit for human consumption.
